Instructions

Heat oil in a large heavy pot over medium heat. Salt chicken and sear until golden. Remove from pot and reserve for later. Add carrot, celery, onion, and garlic and sweat until onions are translucent. Return chicken to pot along with all your herbs and spices, toasting for 3-4 minutes.  Add stock and manoomin and simmer until rice is tender. Add parsley and adjust seasoning if necessary. Goes great with crusty rye bread.

Note: You may replace chicken with rabbit to great success. 

Ingredients

  • 2 T vegetable oil 
  • 2 boneless, skinless chicken thighs, cubed 
  • ½ t salt
  • 3 carrots, peeled and chopped
  • 4 ribs celery, chopped
  • 1 large onion, chopped 
  • 2 cloves garlic, minced
  • 2 sprigs thyme
  • 2 bay leaves
  • 2 t seasoned salt 
  • ½ t oregano 
  • ½ t black pepper
  • 2 qt chicken stock 
  • ½ C manoomin 
  • ¼ C parsley or kale, chopped
