Instructions
Place a large heavy pan over high heat and add oil. Heat until oil begins to smoke, then add all your veggies. Open a window if you need to, then sauté until tender. It’s okay if you get a little char on them. Add spices and stir, toasting them for about two minutes. Add stock and let it reduce until there’s almost no liquid. Stir in butter and adjust seasoning if necessary. It tastes best at a barbecue while sitting in a lawn chair.
- 2 T vegetable oil
- ½ C red bell pepper, diced
- ½ C yellow onion, diced
- 1 ½ C fresh corn, off-the-cob
- ½ C summer squash, diced
- ½ C kidney beans or black-eyed peas
- ¼ tsp paprika
- 1/8 tsp cumin
- ½ tsp oregano
- 1 tsp salt
- ¼ tsp black pepper
- (You could also replace all these seasonings with blackening seasoning if you have some)
- ½ C chicken or veggie stock
- 2 T butter
