Instructions

Add one cup of water into a medium saucepan, and one-half cup shortening either butter or vegetable. Add one-eighth teaspoon salt to water and bring to a boil. Add one cup of flour to the boiling water and heat briskly until it leaves the sides of the pan. Take off the heat. Add four eggs, individually, and beat until the batter is glossy.

Oil cookie sheet. Heap on in long mounds. Bake at 350 degrees for 20 minutes. Reduce heat to 300 degrees for 25 minutes. Cut open while hot. Makes one dozen.

Chocolate: Melt chocolate. Mix all ingredients. Put on top of eclairs. Chopped nuts can be used to garnish. The eclairs can be prepared and put in deep freeze.

Pineapple: Mix ingredients for filling and topping.

1 cup water

1/2 cup shortening or butter

1/8 teaspoon salt

1 cup flour

4 eggs

Chocolate:

2 tablespoons  butter

3 tablespoons of milk

3 squares of chocolate

1 teaspoon of vanilla

1 1/2 cups of powdered sugar

Any flavor ice cream

Pineapple:

1 can crushed pineapple, drained

1 pint whip cream
