Instructions
Combine cornstarch, flour, water, and soy sauce. It’ll be kind of thick and stick to everything. Batter chunks of zucchini, adding to hot oil one at a time. This is very important if you don’t want a giant brick of crunchy mess. Fry these at 350F until crispy. It’s nearly impossible to over fry these, so don’t be worried, they just get crispier. Remove from oil, let drain, and toss in prepared sauce. Garnish with chopped green onions and sesame seeds if you’re feeling sassy.
Note: Toss in buffalo sauce and whip out the ranch dressing for vegan buffalo wings
SAUCE
Heat all ingredients except butter in a saucepan, whisking often. When heated through and homogenous, remove from heat and add butter.
- 1 C corn starch
- ¼ C flour
- ½ C water
- 1 ½ tsp soy sauce
- 1-2 large zucchini or summer squash, cubed
- Oil for frying
- Green onions for garnish

- 1 tsp curry powder
- 6 T butter
