There nothing quite like a delicious bowl of wild rice pilaf! A truly healthy natural food, uncooked Manoomin contains more than 12 percent protein — richer in protein than white rice and most other grains. Gluten-free, low in fat, it is also a good source of minerals and vitamins, too.

Instructions
Rinse manoomin, then add stock and salt, simmering until tender. In a separate pan, brown your butter and sage over medium heat. It will smell nutty and delicious with little brown flecks in it when it’s done. Add squash and sauté for a few minutes to warm through. Season with salt as you go, then add reserved manoomin and maple syrup. Season to your liking, adding more salt or syrup if necessary. Garnishes are sunflower seeds and a little more chopped sage.
- ½ C manoomin (wild rice)
- 2 C veggie stock
- 1 tsp salt
- 2 T butter
- 5 leaves sage, chopped
- 1 acorn squash, cooked and cubed
- 2 tsp maple syrup
- Salt to taste
