Musakhan

Summary

Musakhan is roast chicken, heavily scented with sumac and and a few other warm spices and served with caramelized onion flatbread. It is the epitome of comfort food, Palestinian style.

Instructions

Add onions, oil, water, bullion, and sumac to a deep pan and caramelize your onions on low heat. Cook until all liquid has cooked out and onions begin to darken in color. This will take a while to do right, maybe 40 minutes. Mix spices together in a large mixing bowl then add chicken and olive oil. Give ‘em a good mix. Optionally, you can let this marinate for an hour or two. Roast chicken for about an hour at 450F, until they reach 170F internal temperature and skin is crispy and golden. Spoon onions on warmed flatbread, sprinkle with nuts and top with chicken. Goes great with ice-cold cucumbers and radishes. 

Ingredients

  • 2 red onions, chopped
  • 1/4C extra virgin olive oil
  • 1C water
  • 1t chicken bullion 
  • 1T sumac
  • ¼t cumin
  • ¼t cinnamon
  • ¼t cardamom 
  • 1t ground coriander
  • 1t garlic powder
  • 2t salt
  • 1T sumac
  • 2lbs bone-in chicken pieces
  • 2T cup olive oil
  • Naan or flatbread
  • Pine nuts or almonds
