Instructions
Combine oil and spices in a pot and bring to 170F. Add mushrooms and bring back to 170F, retaining this temperature for ten minutes. Add vinegar and season to your liking. Let mushrooms steep at room temperature until cool. Make sure the mushrooms are covered with oil when refrigerated. These are delicious warmed on toast with herb cream cheese or with eggs.
- 2 C extra virgin olive oil
- 2 bay leaves
- 4 sprigs thyme
- 1 spring rosemary
- 3 tsp red pepper flakes
- 2 lbs mushrooms
- 3 T sherry or cider vinegar
- Salt and pepper
