We made marmalade! A favorite of Paddington and the entirety of the British Isles, marmalade has long had a global reach and colorful history thanks to its simplicity and luscious flavor. Having raised eight children, it's no surprise that First Lady Emma Oglesby had a recipe for marmalade, most certainly deployed to appease picky appetites. We've included a much simpler recipe if you find that this heirloom is a bit tedious.

Instructions
Grate or zest six oranges reserving for later. Slice peel from remaining oranges into thin shreds. Boil shreds in three changes of water until tender and set aside. Chop oranges into pieces, removing tough fibers and seeds. Into a pot add any juice that came from chopped oranges, sugar, a splash of water and the cooked orange shreds. Boil 15 minutes. Add chopped orange pulp and grated peel, boiling 20 minutes. Chill and serve.
Chef Alex's Mechanically-Assisted Easy Orange Marmalade
Cut oranges in quarters and remove any seeds. Place oranges in food processer and pulse until pieces are smaller than a pea. Add orange puree, sugar, and water to a pot and simmer until everything reaches 222F, about 2-3 hours. Stir in vanilla, and refrigerate.
Ingredients
12 oranges (good pulp, thick yellow skin)
Equal weight of oranges in sugar
