Peachy Cream

Summary

We are whipping out the aluminum ring mold and presenting this questionable staple of a bygone era: the Jello Dessert. This gelatinous "treat" features  First Lady Dorothy Ogilvie's favorite ingredient, cream cheese. Her cookbook includes sixty recipes, ten of which include cream cheese. This one for "Peachy Cream" seemed the most interesting.

Instructions

Heat peach juice to boiling. Soften gelatin in lemon juice. Dissolve in hot juice; cool. Mash cream cheese, blend in mayonnaise and salt. Stir in gelatin and whipped cream, fold in celery and sliced peaches. Turn into ring mold; chill until firm. Garnish with sliced peaches and maraschino cherries, if desired—yield: 6 servings.

1 can sliced peaches, drained and juice reserved

1 tablespoon unflavored gelatin

1/4 1 cup lemon juice

1/2 6-ounce package of cream cheese, softened

1/4 cup mayonnaise

1/2 teaspoon salt

1/2 cup heavy cream, whipped

1/2 cup celery, finely chopped
