Instructions

Cook sugar, cornstarch, and pineapple over medium heat, stirring constantly until thick and clear—cool and reserve for later.  Cream together cream cheese, sugar, and salt, then add eggs individually. Blend in milk and vanilla until combined.  Spread pineapple mixture into unbaked crust. Pour cream cheese mixture on top and sprinkle with pecans. Bake at 400F for ten minutes then reduce heat to 325F and bake for another 50 minutes. Cool before serving.

1/3 C sugar

1 tbsp corn starch

1 can crushed pineapple, not drained

1/2lb cream cheese

1/2 C sugar

1/2 t salt

2 eggs

1/2 C milk

1/2 t vanilla

1 9" unbaked pie crust

1/4 C chopped pecans
