Summary

This simple sunchoke hash recipe is great introduction to this nutty root vegetable. It is extremely versatile, and can easily be served for breakfast (top with an egg) or as a side for dinner.

Instructions

Dice sunchokes, place in pot, and cover with cold water and a bit of salt. Boil for approximately ten minutes or until tender. While sunchokes are boiling, dice protein of choice and onion and cook in a large pan over medium heat until onions are translucent. When sunchokes are tender, drain and add to pan, frying until golden brown. For extra crispy, spread them out in a single layer and let them get all toasty. Add mustard, green onion, and season to taste with salt and pepper. Top with a fried egg if that sounds like a good idea to you.

  • 5-6 sunchokes
  • 1 lb corned beef, bacon, or sausage
  • 1 medium onion, chopped
  • 2 tsp Dijon or whole grain mustard
  • 1 green onion, chopped
  • Salt & pepper
