Instructions
Dice sunchokes, place in pot, and cover with cold water and a bit of salt. Boil for approximately ten minutes or until tender. While sunchokes are boiling, dice protein of choice and onion and cook in a large pan over medium heat until onions are translucent. When sunchokes are tender, drain and add to pan, frying until golden brown. For extra crispy, spread them out in a single layer and let them get all toasty. Add mustard, green onion, and season to taste with salt and pepper. Top with a fried egg if that sounds like a good idea to you.

- 1 lb corned beef, bacon, or sausage
