NOTES ON COOKING WILD MUSHROOMS 

Yes, you should wash your mushrooms. They won’t get soggy. There will be bugs and debris. To get the most flavor out of your mushrooms, they should be sauteed or roasted until browned. A hard sear is the best approach. As with anything foraged, if you’re not 100% certain of identifying something - don’t eat it. Even at 99.9% certainty, if there is any inkling of doubt in your mind, don’t eat it. To repeat: if you’re not 100% SURE, there’s no point in eating it.  There are a few great guides available specifically about edible wild mushrooms of Illinois and the surrounding states.
